Sustainable and cost-effective production process for the upcycling of olive

The project

The UP4HEALTH project provides the demonstration at pre-industrial scale of an INTEGRATED BIOREFINERY for the recovery of valuable biomolecules from food processing by-products (grape pomace, Olive pomace and olive stones and nuts by-products) and their conversion into natural, healthy and sustainable high added-value products for the  NUTRACEUTICALS  and COSMETIC  sectors. UP4HEALTH ingredients will meet market requirements of CONSUMERS and INDUSTRY in these sectors.

In UP4HEALTH the recovery of the value of food by-products will tackle objectives at private and institutional perspectives to solve industrial, economic and social problems derived from the generation of residual streams in the food processing industry and the increasing demand for natural and healthier products by consumers and industry in a scenary of limited resources

FRUIT WATER

Low-concentrated ingredient. Naturally flavoured water ideal to be added to drinks.

OIL EXTRACTS

High-concentrated ingredient

Their addition to food matrices, like bakery products, enhances their viscosity, texture, and nutrient richness. Also they can be used for the formulation of natural beauty products as they moisturize skin, lighten skin, tighten pores, reduce the appearance of scars and remove makeup.

FIBER

The fiber obtained from grape, olive, and nut pomace in UP4HEALTH contains a considerable proportion of phenolic compounds and protein.

Xylo-oligosaccharide (XOS)

It is a soluble prebiotic fibre that promotes bowel regularity and digestive health by promoting the growth of probiotic organisms. These oligomers have low-calories, permitting their utilization in anti-obesity diets.
